Ellen's Orchard Salad
This is good anytime of the year BUT…If you want to “dress it up” extra special for Christmas…
Add Craisins for a great red and green holiday, party salad. I love to take this to Christmas parties in a really pretty decorative bowl with fun salad spoons. Serve it and leave the bowl, the spoons and the bottle of dressing with the hostess as a Christmas gift. Voila!
PREP TIME: 20 MINUTES
SERVES: 4 PEOPLE
INGREDIENTS:
2 heads chopped Romaine or 2 bags of Romaine pieces
1 small bag or clam shell Arugula
1 large granny smith apple, thinly sliced
1 tablespoon lemon juice
1 cup pecan pieces
1/4 cup granulated sugar
Dash of cinnamon
3/4 cup Craisins
1/ 1/2 cups Brie cheese, chopped
1/2 botte of “Honey, It’s Dijon Dill!” dressing (or more to taste)
INSTRUCTIONS:
Place sugar in a skillet over medium heat and add pecans and dash of cinnamon. Stir continuously until sugar melts onto the nuts and they turn a toasted, golden brown Remove and cool. Set aside.
Slice apples and toss with lemon juice.
Place both lettuces in a decorative bowl and toss.
Layer Craisins on top of the lettuce, around the bowl.
Layer apples inside the Craisins.
Continue to layer inward with the pecans and finish with the Brie in the middle.
Top with “Honey, It’s Dijon Dill!: dressing right before serving. Toss.
