Mindy's Pasta Salad

FRESH. SIMPLE. FAST. FRIDGE PURGE.

INGREDIENTS:

  • Cooked pasta of your choice. I like Bow Ties.

  • 1 cup chopped yellow or orange pepper

  • 1 cup chopped cucumber

  • 1 cup grape tomatoes, halved

  • 1/2 cup blue cheese crumbles (you can use feta, parmesan or goat cheese if you only have that)

  • Anything you have in the fridge you want to clean out! (olives, onion, pepperoni, zucchini, broccoli, spinach, peas, bacon, shrimp)

  • 1/2 bottle It Takes Three to Tango dressing (or more to taste)

INSTRUCITONS:

  1. Dump cooked pasta in serving bowl.

  2. Chop any veggies or meat you have that you are including. Throw them in.

  3. Toss in cheese.

  4. Cover with dressing and mix. Taste and adjust.
